This Thai-inspired Raw Papaya Salad is a perfect balance of spicy, tangy, and sweet flavors — made with shredded papaya, carrots, and beans tossed in a zesty tamarind-lemon dressing. Ingredients

  • 1 cup shredded raw papaya
  • ½ cup shredded carrot
  • ¼ cup chopped long beans (lightly blanched)
  • 2 tbsp roasted peanuts
  • Few coriander leaves for garnish

For the Dressing:

  • 2–3 garlic cloves
  • 1–2 green chilies (adjust to taste)
  • 1 tbsp tamarind extract
  • 1 tsp jaggery (or brown sugar)
  • 1 tsp lemon juice
  • 1 tsp soy sauce
  • Salt to taste

Instructions

  1. Prepare the veggies: Shred raw papaya and carrot, chop long beans, and keep aside.
  2. Make the dressing: In a mixing bowl or mortar, combine garlic, green chili, tamarind extract, jaggery, lemon juice, soy sauce, and salt.
  3. Add crunch: Toss in roasted peanuts and long beans, and lightly mash to release the flavors.
  4. Combine: Add the shredded papaya and carrot. Mix well until the dressing coats everything evenly.
  5. Serve: Garnish with fresh coriander and enjoy immediately for that perfect crunch!
