Ingredients
- 1 cup shredded raw papaya
- ½ cup shredded carrot
- ¼ cup chopped long beans (lightly blanched)
- 2 tbsp roasted peanuts
- Few coriander leaves for garnish
For the Dressing:
- 2–3 garlic cloves
- 1–2 green chilies (adjust to taste)
- 1 tbsp tamarind extract
- 1 tsp jaggery (or brown sugar)
- 1 tsp lemon juice
- 1 tsp soy sauce
- Salt to taste
Instructions
- Prepare the veggies: Shred raw papaya and carrot, chop long beans, and keep aside.
- Make the dressing: In a mixing bowl or mortar, combine garlic, green chili, tamarind extract, jaggery, lemon juice, soy sauce, and salt.
- Add crunch: Toss in roasted peanuts and long beans, and lightly mash to release the flavors.
- Combine: Add the shredded papaya and carrot. Mix well until the dressing coats everything evenly.
