Vibrant Basil Pesto Pasta

Ingredients
• 2 cups fresh basil leaves
• 2–3 garlic cloves
• ¼ cup pistachios (or any nuts you like)
• ½ cup cheese
• Juice of ½ lemon
• ½ cup olive oil
• 250–300g pasta of choice
• Salt and pepper to taste
• Optional: splash of milk or cream for a creamy texture
Instructions
1. Make the Pesto:
In a blender, combine basil, garlic, pistachios, cheese, lemon juice, and olive oil. Blend until smooth and creamy. Season with salt to taste.
2. Cook the Pasta:
Boil pasta in salted water until al dente. Reserve a little pasta water.
3. Combine:
Toss the hot pasta with generous spoonfuls of pesto. Add a splash of reserved pasta water or milk/cream if you’d like it extra creamy.
4. Finish:
Top with extra cheese, a drizzle of olive oil, and freshly cracked black pepper.
